Ingredients

Instructions
Prepare the Base
Preheat oven to 325°F (165°C). Line a 9×13 inch baking pan with parchment paper.
Combine cookie crumbs, melted butter, and sugar until mixture resembles wet sand.
Press firmly into the prepared pan. Bake for 10 minutes. Cool completely.
Make the Coffee Layer
Mix cooled coffee with espresso powder, vanilla extract, and maple syrup.
Brush the cooled crust lightly with coffee mixture. Reserve remaining mixture.
Create the Cheesecake Layer
Beat cream cheese until smooth and creamy, about 3 minutes.
Add sugar gradually, beating until well combined.

Stir in heavy cream, vanilla extract, and flour until just combined.
Pour half the mixture over the coffee-soaked crust.
Drizzle with remaining coffee mixture.
Add remaining cheesecake batter carefully.
Baking and Decoration
Bake for 45-50 minutes until edges are set but center still has a slight jiggle.
Cool completely at room temperature.
Refrigerate for at least 4 hours or overnight.
Before serving, dust generously with cocoa powder.
Decorate with colorful sprinkles and fresh mint leaves.
