Cake with Biscuits, Chocolate and Cream Cheese
Ingredients:
250 g biscuits (you can use dry biscuits such as digestive biscuits or shortbread biscuits)
15 g cocoa powder
15 g coconut flakes
80 g dark chocolate
200 g cream cheese (such as Philadelphia or similar)
100 g sugar
100 ml liquid cream
1 teaspoon vanilla extract
A pinch of salt
Preparation:
Prepare the cake base:
In a mixer, crush the biscuits until you obtain a fine powder.
Add the cocoa powder and coconut flakes to the crushed biscuits and mix well.
Melt the dark chocolate in a bain-marie or in the microwave and add it to the biscuit mixture.
Mix well until you obtain a uniform mixture. If the mixture is too dry, add a spoonful of milk or water.
Pour the mixture into a baking tray lined with baking paper and press well to obtain a compact base. Place the pan in the refrigerator to cool for at least 30 minutes.
Prepare the cream cheese:
In a bowl, beat the cream cheese with the sugar until smooth.
Add the liquid cream and vanilla extract, then continue mixing until the mixture becomes soft and velvety. Add a pinch of salt to balance the flavors.
Assemble the cake:
Once the biscuit base has cooled, pour the cream cheese on top and level it with a spatula.
Place the cake in the refrigerator and let it cool for at least 2 hours, so that the cream solidifies and the flavors blend well.
Decorate and serve:
Before serving, you can decorate the cake with chocolate chips, grated coconut or even fresh fruit, such as raspberries or strawberries.
Cut into slices and serve fresh!

Storage: Store the cake in the refrigerator for 3-4 days.
Variations: If you want to add a touch of crunch, you can mix some chopped walnuts or almonds into the cookie base. Also, you can replace the dark chocolate with milk chocolate for a sweeter version.
