Potato and bacon pie

Here is the recipe for preparing a potato and bacon pie, an easy, quick and very tasty dish:

Ingredients:
600 g potatoes (about 4 medium potatoes)
100 g smoked pancetta (or bacon), diced
100 g grated cheese (such as parmesan or grana)
2 eggs
100 ml milk
Salt and pepper to taste
Butter or oil to grease the pan
Instructions:
Prepare the potatoes:
Peel the potatoes, cut them into cubes and boil them in salted water until they become soft but not flaky. Drain them well.
Cook the bacon:
In a non-stick pan, cook the bacon cubes until they become golden and crispy. Drain them on absorbent paper to eliminate the excess fat.
Prepare the dough:
In a large bowl, mash the boiled potatoes with a fork or potato masher until smooth.
Add the cooked bacon, grated cheese, lightly beaten eggs, milk, salt and pepper. Mix all the ingredients well until smooth.
Prepare the flan:
Butter or oil a baking pan (you can use a square or rectangular pan).
Pour the potato and bacon mixture into the pan, leveling it with a spatula.
Cooking:
Preheat the oven to 180°C.
Place the flan in the oven and cook for about 30-40 minutes, or until the surface is golden and crispy.
Serving:
Once cooked, let the flan rest for a few minutes before cutting it into portions. Serve hot.
Tips:

You can enrich the flan by adding fresh aromatic herbs such as thyme or chopped parsley to the potato mixture.
If you prefer a lighter version, you can replace the whole milk with semi-skimmed milk or vegetable milk.
