Beef Stroganoff

Ingredients
1 lb (500 g) beef sirloin or tenderloin, thinly sliced
2 tablespoons vegetable oil

1 onion, finely chopped
2 cloves garlic, minced
7 oz (200 g) mushrooms, sliced
1 teaspoon Dijon mustard
1 teaspoon paprika
1/2 cup (120 ml) beef broth
1/2 cup (120 ml) sour cream
1 tablespoon all-purpose flour (optional, for thickening)
Salt and black pepper, to taste
1 tablespoon fresh parsley, chopped (for garnish)
1 tablespoon butter
10 oz (300 g) egg noodles, rice, or mashed potatoes, for serving
Directions
Sea the beef:
Heat the vegetable oil in a large skillet over medium-high heat. Add the beef strips to the skillet and cook for 2-3 minutes until golden brown on all sides. Remove the beef from the skillet and set aside.
Cook the vegetables: 2. Add the chopped onion and garlic to the same skillet. Cook for 2-3 minutes until the onion is soft and translucent. 3. Add the sliced mushrooms to the skillet and cook for another 5 minutes, stirring occasionally, until the mushrooms are soft and have released their moisture.
Make the sauce: 4. Add the Dijon mustard and paprika, cooking for about 1 minute until fragrant. 5. Add the beef broth to the skillet and bring the mixture to a boil. Let it cook for 5 minutes to reduce slightly. 6. Add the sour cream and cook until the sauce is smooth and very hot. If you want a thicker sauce, sprinkle the flour over the sauce and stir well to combine.
Mix Beef and Sauce: 7. Return the cooked beef to the pan and stir to coat with the sauce. Simmer for another 3-4 minutes until the beef is cooked through and tender. Season with salt and pepper to taste.
Serve: 8. Serve the Beef Stroganoff over cooked egg noodles, rice, or mashed potatoes. Garnish with fresh parsley and enjoy!
