Ingredients
2 cups all-purpose flour
2 cups granulated sugar
3/4 cup unsweetened cocoa powder
2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
1 cup buttermilk
1/2 cup vegetable oil
2 large eggs
2 tsp vanilla extract
1 cup boiling water
8 oz white chocolate, chopped
2 cups heavy cream, divided
1 tsp vanilla extract
8 oz dark chocolate, chopped
1 cup heavy cream
Directions:
Preheat your oven to 350°F (175°C) and generously grease three 9-inch round cake pans. In a big mixing bowl, whisk together that flour, sugar, cocoa powder, baking powder, baking soda, and salt until it’s all blended. Then, add in the buttermilk, vegetable oil, eggs, and vanilla extract, mixing until everything is just combined. Stir in that boiling water – it’ll help make your cake so moist!
Now it’s time to bake! Divide that luscious batter evenly among your prepared pans and pop them in the oven for about 30-35 minutes. You’ll know they’re ready when a toothpick comes out clean. After baking, let the cakes cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
For the white chocolate mousse, melt the white chocolate with half of the heavy cream over a pot of simmering water, stirring until it’s smooth. Let it cool down a bit. In a separate bowl, whip the remaining heavy cream with the vanilla extract until it reaches stiff peaks. Gently fold that whipped cream into the cooled chocolate mixture until it’s beautifully combined.
Next up, we need to make the dark chocolate ganache! Heat the remaining cream until it just starts to boil, then pour it over the chopped dark chocolate. Let it sit for about 5 minutes to melt, and then stir until it’s silky smooth.
Now we’ll assemble our showstopper! Place one chocolate cake layer on your serving plate and spread half of that dreamy white chocolate mousse over the top. Add the second cake layer and spread the rest of the mousse.
Finally, place the third cake layer on top and pour that glossy dark chocolate ganache over the entire cake, letting it drip down the sides!
