LA VIÑA CHEESE CAKE
Here is the recipe for La Viña Cheese Cake, famous for being incredibly creamy and delicious, like the one from the famous pastry shop in San Sebastián! 🍰✨

Ingredients:
1 kg of cream cheese (such as Philadelphia or mascarpone)
7 large eggs
400 g of sugar
500 ml of fresh liquid cream (at least 35% fat)
1 tablespoon of flour (about 15 g)
Preparation:
Preheat the oven: Set the temperature to 200 ° C. Line a springform pan (22-24 cm) with baking paper, leaving plenty of edges protruding to prevent the cream from overflowing.
Mix the ingredients:
In a large bowl, add the cream cheese and sugar. Beat until smooth and creamy.
Incorporate the eggs, one at a time, continuing to mix.
Pour the fresh cream and mix gently.
Finally, add the flour and mix everything well.
Pour into the mold: Transfer the mixture into the prepared mold, leveling it gently.
Bake:
Bake at 200°C for about 50-55 minutes. The surface should be golden brown and slightly burnt, while the center should remain soft and wobbly.
Cool:
Let the cake cool to room temperature, then transfer it to the refrigerator for at least 4-6 hours (or better all night) to obtain the right consistency.
Serve:
Remove the cake from the mold, remove the baking paper and bring to the table! You can accompany it with fresh fruit, a berry sauce or simply enjoy it plain. 😋
