Moist & Flavorful Carrot and Pineapple Cake Recipe
Ingredients:
2 cups all-purpose flour
2 tsp baking soda
1½ tsp cinnamon
½ tsp nutmeg
½ tsp salt
3 large eggs
1½ cups granulated sugar
1 cup vegetable oil
1 tsp vanilla extract
2 cups grated carrots
1 cup crushed pineapple (drained)
1 cup chopped walnuts (optional)
Instructions:
Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
In another bowl, beat eggs and sugar until smooth. Stir in oil and vanilla.
Gradually mix dry ingredients into wet ingredients until just combined.
Fold in grated carrots, pineapple, and walnuts (if using).
Pour batter into the prepared pan and bake for 35-40 minutes or until a toothpick comes out clean.
Cool completely before frosting or serving.
