Introduction:
Lemon biscuits are a real treat for the palate: soft on the inside, slightly crunchy on the outside and with an irresistible citrus scent. Perfect to accompany afternoon tea or to indulge in a sweet break, these biscuits are simple to prepare and require a few genuine ingredients. Their delicate flavour and soft texture make them ideal for those who love light and fragrant desserts.

Ingredients (for about 20 biscuits):
100 g of oil (seed oil or delicate extra virgin olive oil)
1 tablespoon of corn starch
300 g of 00 flour
5 g of baking powder
1 egg
Juice of 1 fresh lemon
90 g of granulated sugar

Step by step preparation:
.1️⃣ Prepare the dry ingredients
In a large bowl, sift the 00 flour, baking powder and corn starch. Mix with a whisk to distribute the ingredients evenly, making the dough softer.

2️⃣ Prepare the liquid mixture
In another bowl, beat the egg with the granulated sugar using a hand or electric whisk, until the mixture is light and frothy. This step will help incorporate air, making the biscuits softer.

Pour in the oil, continuing to mix, then add the fresh lemon juice, which will give an irresistible citrus aroma. Mix well until the mixture is smooth and fragrant.

3️⃣ Form the dough
Combine the liquid mixture with the flour, yeast and cornstarch mixture. Mix gently with a wooden spoon or with your hands until the dough is soft and without lumps. If the dough is too sticky, add a spoonful of flour, but do not overdo it: it must remain soft to ensure the right consistency for the biscuits.

4️⃣ Shaping the cookies
Line a baking sheet with parchment paper. Using a teaspoon, scoop out small portions of dough and roll them between your hands into walnut-sized balls.

Dredge each ball in powdered sugar, coating it completely to get the typical sugary crust during baking. Arrange the cookies on the baking sheet, leaving space between them to allow for even growth.

5️⃣ Baking the cookies
Preheat the oven to 180°C and bake the cookies for 10-12 minutes, until they are lightly golden on the surface. Do not overcook to keep them soft on the inside.

6️⃣ Finishing touches and serving
Let the cookies cool on a wire rack, so as to prevent them from becoming moist at the base. If you want an extra touch of sweetness, sprinkle them with powdered sugar before serving.
