Soft Greek Yogurt Cake
“A light and fragrant dessert, perfect for a healthy breakfast or a delicious snack!”
Ingredients:
4 eggs
70 g sugar
350 g Greek yogurt
40 g cornstarch
40 g baking powder
Grated zest of 1 lemon
1 teaspoon vanilla essence
Method:
Separate the egg whites from the yolks.
Beat the egg yolks with the sugar until the mixture is light and frothy.
Add the Greek yogurt, sifted cornstarch, baking powder, lemon zest and vanilla essence, mixing well to incorporate the ingredients.
Beat the egg whites until stiff and gently fold them into the mixture with movements from the bottom upwards so as not to deflate them.
Pour the mixture into a 21×7 cm mold, previously lined with baking paper or buttered.
Bake in a static oven preheated to 170°C for 30 minutes.
Remove from the oven and let cool completely before serving.
