Strawberry Cake
Introduction

Ingredients
15 g unsalted butter (1 tbsp)
30 g vegetable oil (2 tbsp 1 tsp)
40 g milk (2 tbsp 2 tsp)
30 g white sugar (I) (2 tbsp 1 tsp)
70 g plain flour (½ cup 2 tsp)
3 eggs
60 g white sugar (II) (½ cup 1 tsp)
Vanilla pastry cream
200 g milk (¾ cup 4 tsp)
100 g white sugar (½ cup)
16g cornstarch or cornstarch (2 tbsp)
1 egg yolk
½ tsp tsp vanilla paste
20g unsalted butter (1 ½ tbsp)
Stabilized whipped cream
450g heavy/thick cream (2 cups)
¼ tsp gelatin
1 tsp cold water
50g white sugar (¼ cup)
Assembly
500g fresh strawberries, uniform in size (17 oz)

Instructions:
1. Preheat the oven to 160°C fan-assisted
2. Line the base of an 8-inch cake tin
3. In a medium bowl, whisk the egg yolks
4. In a small saucepan, heat the milk, oil, butter and sugar (I) over a low heat until melted
5. While whisking, pour the milk mixture into the egg yolks and whisk until smooth
6. Sift the flour into the egg yolk mixture and mix until combined
7. In a separate bowl, whisk the egg whites with the sugar (II) until stiff peaks form stiff peaks
8. In three additions, fold the meringue into the egg yolk mixture, being careful not to deflate the bubbles
9. Transfer the batter to the cake tin
10. Place the cake tin in a bain-marie (a tray/can of boiling water) and bake for 60 minutes
11. Turn off the oven and leave in the oven for 15 minutes
12. Once cooled, run a knife around the edge of the cake tin and turn the tin over
13. Wrap in cling film and refrigerate until ready to assemble
Vanilla Custard:
Heat the milk in a small saucepan over low heat until steaming
Combine the egg yolk, sugar, cornflour and vanilla in a medium bowl and whisk
Add the heated milk to the egg mixture and whisk
Return the mixture to the saucepan and heat over low heat, stirring constantly
Continue stirring until thickened
Remove from heat and stir in butter
Transfer to a small bowl and cover with plastic wrap, pressing the plastic wrap onto the surface of the custard
Chill
Once cooled, whisk until smooth and transfer to a piping bag
Stabilized Whipped Cream:
Combine gelatin and water in a small bowl and let sit for 5 minutes
Combine cream and sugar in the bowl of a stand mixer, whisk until soft peaks form
Microwave gelatin mixture for 20 seconds, or until just melted
Add a spoonful of cream to the melted gelatin and mix until smooth and well combined
With the stand mixer on medium speed, add the gelatin-cream mixture and whisk until to medium-stiff peaks
Fill a piping bag and set aside until ready to use
To assemble:
Remove the caramelized top layer of the sponge cake, then cut the cake into two thin layers
Cut the cake layers into 7-inch circles using the cake ring
Line the cake ring with a strip of acetate paper (or parchment paper if you don’t have any)
Place a sheet of cake in the bottom of the ring and line the sides with halved strawberries, cut side down, facing the side of the cake ring
Fill the spaces between the strawberries with whipped cream
Place the custard in the center
Arrange the whole strawberries flat on the custard until the base of the cake is covered
Fill the remaining spaces with whipped cream (make sure to leave some for the top of the cake) then top with the cake layer remaining
Top with remaining whipped cream and smooth with a spatula
Decorate with remaining strawberries
Place in the refrigerator to set for 3-4 hours, or overnight
Once set, remove from cake ring and carefully remove acetate strip (or parchment paper) before serving
