Thumbprint biscuits are crumbly and delicious sweets, perfect to serve at the end of a meal with a cup of espresso or as a snack accompanied by a good fruit infusion. Characterized by a central hollow made with the fingertip, hence the name thumbphrint, literally thumbprint in English, they house a fragrant and melting heart of fruit jam in the center.

Light and crumbly, to bring them to the table, you just need to prepare a sort of sablée pastry by working together the cold butter in cubes with the granulated sugar, the egg yolk, the flour and the vanilla extract. Once you have obtained many balls of about 20 g each from the smooth and homogeneous dough obtained, all you have to do is roll them in the chopped hazelnuts, make the dimple in the center and then pour a teaspoon of jam of your choice inside.
The passage in a hot oven at 180 °C for just 15 minutes will do the rest, giving you fragrant and delicious pastries, excellent to offer also for a party buffet or for Sunday brunch with the family.

For a perfect result, we suggest you let the biscuits harden in the fridge for at least half an hour before putting them in the oven: in this way they will maintain their shape perfectly during cooking without flattening too much. If you like, you can fill the thumbprints with raspberry, strawberry or apricot jam, or you can replace it with a classic or coffee custard, or with a white chocolate ganache.

If you prefer, you can replace the chopped hazelnuts with almonds or pistachios, or you can try a dark version and add bitter cocoa powder to the dough.
