Chocolate and Mascarpone Fondant Cake
🛒 Ingredients
200 g dark chocolate 🍫
250 g mascarpone 🧀
70 g caster sugar 🍬
40 g flour 🌾
4 eggs 🥚

Preparation
1️⃣ Melt the chocolate
Melt the 200 g of dark chocolate in a bain-marie or in the microwave using short pulses. Stir regularly to prevent it from burning.

2️⃣ Work the mascarpone and sugar
In a salad bowl, relax the mascarpone with an electric mixer. Add the caster sugar and mix until smooth and creamy.

3️⃣ Add the melted chocolate
Gently pour the melted chocolate into the mascarpone-sugar mixture and mix well until smooth.

4️⃣ Incorporate the eggs one by one
Add the eggs, one by one, mixing carefully after each addition. This will allow you to obtain a very smooth dough.

5️⃣ Add the flour
Sift and incorporate the flour into the dough, mixing gently until the lumps have completely disappeared.

6️⃣ Perfect cooking
Preheat your oven to 150°C (fan-assisted). Pour the dough into a silicone or buttered mold and bake for 25 minutes.
📌 Tip: The center should remain slightly wobbly for a perfect fondant!

🍽️ Tasting and advice
Let the cake cool before tasting it for a melting center. You can also keep it cool for a firmer and more intense texture.
