Ingredients

1 cup white chocolate chips
8 oz cream cheese, softened
1/4 cup powdered sugar
1 teaspoon vanilla extract
1/2 cup crushed graham crackers
1/4 cup fresh raspberries, mashed
1 tablespoon raspberry jam (optional for extra sweetness)
1/2 cup white chocolate chips (for coating)

Directions

In a microwave-safe bowl, melt the 1 cup of white chocolate chips in the microwave in 30-second intervals, stirring in between until smooth and completely melted. Let cool slightly.
In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
Add the melted white chocolate to the cream cheese mixture and mix until combined.
Stir in the crushed graham crackers and mashed raspberries. If you want the balls to be sweeter, mix in the raspberry jam at this point.
Using your hands or a small scoop, roll the mixture into bite-sized balls, about 1-inch in diameter. Place the balls on a baking sheet lined with parchment paper.
Melt the remaining 1/2 cup of white chocolate chips in the microwave and drizzle or dip each cheesecake ball into the melted white chocolate for an extra layer of sweetness and a glossy finish.
Refrigerate the cheesecake balls for at least 2 hours or until firm.
Serve and enjoy!
